Salsa Stuffed Chicken for this Covid-19 Father’s Day 2020!



So it’s Father’s Day, and you missed giving “dad” breakfast in bed because you had to take little Johnny to his grandparents so you can spend quality time with your other half on his special day. It’s almost noon and you’d like to be out of the kitchen by 1 pm latest. You would have liked to prepare pork chops, but that’s going to take all day, and it’s way too hot today to grill! Not to worry, we have the perfect recipe for dinner for Johnny's father that takes less than an hour to prepare. This Salsa Stuffed Chicken is not only easy to prepare, but it's healthy (Gluten-free) and delicious! 


Salsa Stuffed Chicken


To prepare this Gluten-free, delicious dish, you will need the following:

Boneless and/or skinless chicken breasts, lemons, olive oil, salsa, cheese, and a thermometer. 


Ingredients:

1/2 jalapeno 

6 lemons - juiced

½ cup cilantro 

½ teaspoon salt

1 clove garlic 

⅓ cup water

⅓ cup of your favorite salsa

Taco seasoning 

1 teaspoon olive oil

¼ cup shredded cheddar cheese

2 lbs chicken breast

Method:

Place  jalapeno, lemon juice, cilantro, salt, garlic, and water in a blender and blend on “high” speed until smooth.  

Place chicken breasts in a large ziplock bag and pour mixture inside the bag. Close the bag and let marinade in the refrigerator for at least 15 minutes. 

N/B: The longer the marinade, the tastier the dish, so if you do have some time, leave the bag in the fridge for a longer period. I recommend up to two hours, so you can prep the chicken before taking little Johnny to his Grands. 

Preheat the oven to 425°F.  Line a heavy-duty baking pan with heavy-duty foil.  

Slice a pocket into the chicken breast for the salsa. Don’t start at the end so as not to split the breasts in half. An inch in is a good place to start.

Fill the pockets with your favorite salsa. The chipotle version gives the flavor more depth, but you can use whichever you prefer.  

Place chicken breasts in the lined baking pan and coat with olive oil. Sprinkle with taco seasoning and place in the preheated oven. Bake for 30 minutes (Ensure the internal temperature of chicken reaches at least 165°F).  Sprinkle chicken with cheese, cover with foil and return to the oven for another 5 minutes or until cheese is fully melted. 

Remove. Cool. Serve with his favourite veggies and a glass of Chardonnay.

The entire process takes exactly one hour!
